Creepy Pudding Cups (gluten-free, dairy-free)


These pudding cups are a fun way to celebrate Halloween, and are super easy to make. Feel free to garnish them with other candy or even plastic spiders! Kids can also help by mixing the chia seeds with water, adding ingredients to the blender, and garnishing with the gummy worms!

Note: If a creamy pudding is desired, add the chia mixture to the blender with the other ingredients and blend until smooth.

Prep time: 10 mins (plus 1 hour soaking time)
Cook time: 0 mins

Yield: 4 servings

Ingredients
¼ cup chia seeds
¼ cup raw cashews
6 Medjool dates, pitted
¼ cup cocoa powder
¼ teaspoon sea salt
6 ounces gummy worms
⅓ cup chocolate chips

Directions

  1. Add chia seeds to a mixing bowl. Cover with 1 cup of water, mix well and set aside. In a separate bowl, add the cashews and cover with ½ cup of water. Let chia seeds and cashews sit for 1 hour.
  2. Add the cashews and soaking water to a blender, along with the dates, cocoa powder and salt. Blend until smooth, scraping down the sides as needed.
  3. Pour the cashew milk mixture into the bowl with the chia seeds and mix well.
  4. Divide the pudding between four cups and top with the gummy worms and chocolate chips.
