Fermented Spritzer with Fresh Summer Fruit

This spritzer is a wonderful way to get your probiotics and antioxidants too! The recipe uses brine, a salty fermented liquid that is a byproduct of making sauerkraut. If you don’t make your own sauerkraut at home, you can use brine from a store-bought sauerkraut or substitute kombucha instead. This drink is lightly sweet and just a tad salty, making it the perfect electrolyte replacer in hot weather or a tasty treat to enjoy on a sunny day.

1 tablespoon Natural Calm raspberry-lemon or cherry flavor
½ cup hot water
1½ cups cold water
2 cups coconut water
¼ cup brine (see note below)
1 peach, pitted and sliced
¼ cup fresh blueberries (optional)
Place Natural Calm powder in a glass or mug, add hot water. Let it fizz, then stir until dissolved. Mix with cold water, coconut water, brine, fresh fruit, and serve over ice.
Brine can come from the juice of homemade sauerkraut or store-bought, or you can use kombucha. If you opt for store-bought sauerkraut juice, be sure to use a raw product so that it still has live bacteria or probiotics. Many farmers’ markets now sell raw sauerkraut.
