Finally, Memorial Day Coleslaw Gets a Makeover

Coleslaw is a popular dish, but traditional coleslaw recipes are full of unhealthy fats and sugar. Instead, this Memorial Day, treat yourself and your loved ones to a healthier version of coleslaw that’s tangy and just a tad spicy. Daikon radishes are full of vitamin C and are popular in Asian cuisine because they are milder than other radishes. If daikon radish is not available, one bunch of red radishes may be substituted.

Serves 4
Prep time: 10 minutes
Cook time: 0 minutes

1 bunch lacinato or curly kale, shredded
3 medium carrots, shredded
1 medium daikon radish, shredded
¼ cup olive oil
2 tablespoons apple cider vinegar
½ teaspoon sea salt
2 tablespoons raw honey (optional)

1.  Add kale, carrots and radish to a large bowl.
2.  Mix olive oil, apple cider vinegar, sea salt and honey (if using).
3.  Drizzle dressing over kale and veggies and toss well until incorporated.
4.  Refrigerate until serving.

Note: If a softer texture is desired, massage kale with clean hands for 1–2 minutes prior to tossing with the dressing. This will help to break down the cell walls in the kale, making it less tough.
