Fourth of July Pops
These colorful pops are a delicious, dairy-free treat that’s perfect as an afternoon snack or dessert on a hot evening! You can use any type of yogurt and can substitute whatever berries are in season.
Prep time: 10 minutes + overnight
Cooking time: 0 minutes
Yield: Makes 6 (3 oz) popsicles (may vary depending on size of mold)
Ingredients
⅔ cup chopped strawberries
1 cup coconut water, divided
½ cup coconut yogurt (or yogurt of choice)
½ cup blueberries
Directions
- Add the strawberries to the popsicle molds and cover with ½ cup coconut water.
- Freeze for 1½ hours, then add the next layer by spooning in the coconut yogurt.
- Freeze for an additional 1½ hours, then add the final layer by adding the blueberries and covering with the remaining coconut water.
- Freeze popsicles for an additional 2–3 hours until completely frozen. Enjoy cold!
