Healthy Pumpkin Spice Truffles


Get your sweet fix minus the refined sugar with these sweet little treats created by our friends at Navitas Naturals. Instead of sugar, you’ll use alternative sweeteners made from fruit: lucuma powder and yacon syrup, which are rich in vitamins but low on the glycemic scale. They may seem expensive up front, but they will last a long time. These balls are high in fiber and antioxidants and make for a wonderful treat as an after-school snack or with tea.

Healthy Pumpkin Spice Truffles
Makes 12

Ingredients

For the Truffles
⅓ cup soft Medjool dates (about 5–6 large)
¼ cup Navitas Naturals Lucuma Powder
1 tablespoon Navitas Naturals Coconut Palm Sugar
2 tablespoons Navitas Naturals Yacon Syrup
2 tablespoons canned or freshly steamed pumpkin purée
¼ cup Navitas Naturals Cacao Butter, melted
1 tablespoon coconut oil
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
Big pinch sea salt

For the Coating
1 tablespoon Navitas Naturals Coconut Palm Sugar
1 teaspoon pumpkin pie spice
2 tablespoons Navitas Naturals Hemp Seeds

Instructions

  1. In a food processor, combine all the truffle ingredients. Process until a smooth mixture has formed, scraping down the sides as needed.
  2. Transfer the mixture to a bowl, cover, and refrigerate for one hour to partially firm up.
  3. In a small bowl, mix together the coating ingredients.
  4. Once the filling mixture is firm and pliable, remove from the refrigerator.
  5. A scant tablespoon at a time, scoop up a little of the filling and form it into a ball. Roll the ball in the coating ingredients to dust the exterior, and set on a plate.
  6. Repeat with remaining mixture to form 1 dozen balls in total.


Notes
Truffles are best served at room temperature where they will keep, covered, for a few days. For long-term storage, refrigerate for up to one week.
