Julienned Burdock Root Salad with Scallions and Cilantro

This is a great way to get burdock into your system while enjoying a crunchy, refreshing and delicious dish. Burdock is low in calories, high in potassium, and known for its antioxidant and cleansing qualities.

Prep time: 10 minutes

Serves 4


1 cup julienned burdock root
½ cup seasoned rice vinegar or lemon juice
¼ cup scallions, chopped
¼ cup cilantro, chopped
2 tablespoons toasted sesame seeds

Combine all ingredients and let stand for one hour before serving.

      If your local natural products store doesn’t stock it, I would ask if they can special order it for you. You can also ask farmers at your farmers markets. Hope this helps!
