Quick and Delish Avocado Toast 2 Ways

This easy recipe from food blogger and nutrition coach Linda Wagner caught our attention for its simplicity and healthfulness. It’s ideal when you are tight on time but don’t want to cave in to junk food. We also like the versatility: Don’t like avocado? Try it with hummus. Don’t eat wheat? Make it on a rice cracker.

Avocado Toast Two Ways


2 slices Ezekiel bread
Cherry tomatoes
Any additional sauces of choice


Avo Toast #1: Spread with a spicy hummus.
1.  Add a layer of pesto.
2.  Top with cucumber slices, pea sprouts and sliced avocado.

Avo Toast #2: Spread with regular hummus.
1.  Add a layer of pesto.
2.  Top with avocado, sliced cherry tomatoes and micro greens.


  • Base options: Hummus, smeared avocado, baba ghanoush, red pepper spread, pistachio pesto, kale & walnut pesto, sundried tomato tapenade
  • Veggies: Tomatoes, sun-dried tomatoes, sliced avocado, sliced cucumber, zucchini, asparagus, shredded carrots, sliced mushrooms, sliced beets
  • Greens: Sprouts, kale, spinach, arugula, Swiss chard
  • Sauces: Sriracha, vinaigrette dressing, mustard, salsa
  • The possibilities are endless!! Have fun coming up with your own creations!
