Roasted Rosemary Parsnip Fries

These Roasted Rosemary Parsnip Fries are perfect for when you’re craving a healthy snack that’s satisfying as well! This is also a great recipe to make at home with kids of all ages (young children can help by laying the already-cut parsnips on the sheet pan and sprinkling the salt and rosemary). The recipe is versatile too, as different herbs and spices can be substituted as desired.

1½ pounds parsnips (about 4 medium parsnips)
1 tablespoon coconut oil
1 tablespoon fresh rosemary, chopped
Sea salt and black pepper, to taste


  1. Preheat oven to 400 degrees F.
  2. Wash and peel parsnips. Cut into thin, fry-like strips. Toss parsnips with oil and lay flat on a baking sheet.
  3. Roast for 10 minutes and then flip parsnips. Roast for an additional 10–15 minutes, until parsnips are crisp and browned.
  4. Sprinkle rosemary over parsnips and season with salt and pepper to taste. Serve warm.
