Vegan Avocado Greek Salad

This delicious version of a Greek salad uses creamy avocado in place of cheese. It’s the perfect side dish to any summer meal! Pair it with your favorite plant-based protein source or a lean protein for a hearty meal! You can also serve it on top of a bed of greens if desired.

Yield: Serves 4 as a side

1 large cucumber, cut in half and sliced
2 cups cherry tomatoes, halved
1 red bell pepper, cored and sliced
¼ red onion, thinly sliced
½ cup pitted Kalamata olives
1 large avocado, diced


3 tablespoons extra-virgin olive oil
1 tablespoon red-wine vinegar
1 tablespoon brown mustard
½ teaspoon garlic powder
1 teaspoon Italian seasoning
Pinch of sea salt


Add the cucumber, cherry tomatoes, bell pepper, onions, olives and avocado together in a large bowl.
Mix the ingredients for the dressing in a separate bowl, then pour over vegetables and toss to coat. Serve immediately, or store in the refrigerator until serving.
