Healthy Pumpkin Spice Energy Balls

½ cup pitted Medjool dates
¼ cup pumpkin purée
½ cup cashews
½ teaspoon pumpkin pie spice
⅓ cup unsweetened coconut flakes


  1. Add all ingredients to a food processor. Process until ingredients are well incorporated and smooth.
  2. Use a tablespoon to portion dough. Roll with your hands into one-inch balls.
  3. Enjoy immediately or store in a sealed container in the refrigerator in a single layer.
